Baked Macaroni Western Style Recipe
2 cups uncooked macaroni
1 cup chopped tomatoes
2 tbsps. of flour
1 1/2 cups of milk
1/2 tsp. of cayenne pepper
2 tbsps. of butter
2 cups of shredded cheese (Cheddar)
3 tbsps. diced gree chile
3 tbsps. of light cream
A pinch of salt
Macaroni should be cooked following the package instructions and be sure to drain them well. In a saucepan on medium flame, combine together cream and milk to warm them up.
If you are using a microwave, just put the cream and milk inside a measuring cup made of glass and heat for 2 mins. making sure that the liquid doesn’t boil.
In a separate medium sized saucepan on moderate heat, melt butter then add in flour continuously stirring the mixture until paste is formed.
Add in warmed milk onto the melted butter & flour mix then cook while constantly stirring just until the mixture becomes creamy and thick.
Next, add in portions of shredded cheese still stirring it constantly just until all of the cheese melts.
Add in the seasonings, tomatoes and chile. Toss together sauce and macaroni then add the pasta in a well greased 2-qt. casserole dish.
Cook in the oven uncovered for around 35-40 mins. at around 400′ F or just until the top of the pasta is browned nicely.
