Baked Orzo with Seafood and Feta Recipe
3/4 cup of orzo pasta (13/4 cups when cooked)
1/2 lb. baby shrimps, cooked
1 (28-oz) can tomatoes, chopped
1 lb. steak or fillet of halibut
1 cup of yellow onion, chopped finely
1 cup of reduced sodium chicken broth
1/4 tsp. ground black pepper
1 tbsp. extra-virgin olive oil
1 (4-oz) pkg. of feta cheese crumbled and seasoned with some tomatoes that have been dried and basil.
2 med. cloves peeled & minced garlic
1 tsp. sugar
1/4 – 1/2 tsp. salt
3/4 tsp. crushed dried Italian herbs
2 tbsps. Parsley, chopped
Oven should be preheated to around 400′ F. Orzo should then be cooked inside a big pot of boiling water according to the package instructions. Drain the pasta then set it aside.
Take out the bones and skin of the fillet of halibut then cut it in 1-inch thick pieces then set it aside.
In an oven-proof skillet measuring about 10 to 12 inches, heat 1 tbsp. of olive oil then saute onions for 5 mins then saute for 2 mins. more after you have added the chopped garlic.
Add in tomatoes, chicken broth, pepper, salt, herbs and sugar then bring it to boiling point after which lower the flame to simmer it uncovered for 10 mins. while stirring often. (Sauce can be made a day prior to cooking.
Just be sure to cool it first, cover then refrigerate. Sauce should be reheated before moving on to the next instruction.)
Take the skillet out of the flame and add in halibut & pasta in your sauce. Bake it covered for 8 mins. then fold gently cooked shrimp & parsley in the pan then layer the top with crumbled cheese.
Continue to bake it uncovered for 8-10 mins more or just until sauce bubbles up and fish has cooked well. Allow to cool for 5 mins. prior to serving.
Note: 7 oz. packet of tuna (water-packed) is a substitute for cooked shrimp & halibut. Just add tuna to sauce together with pasta then bake covered for 8 mins. and then take off the cover then continue to cook inside the oven for 8-10 mins. more.
