Seafood Linguine Recipe
1 lb. linguini pasta
1/2 cup of Chablis or any dry white wine
1 (14 1/2 oz.) can of drained & chopped whole tomatoes
1 minced clove of garlic
1/3 lb. peeled fresh shrimp (small size)
1/8 tsp. salt
1/4 lb. bay scallops
1 pc. Bay leaf
1 small sliced thinly onion
1/2 cup of green pepper, chopped
1/2 tsp. dried whole basil
1 tbsp. fresh parsley, chopped
Linguini should be cooked until it becomes tender. Spray some cooking spray on a big skillet and put it on medium flame until the pan heats up. Add in garlic & onions and saut� for 5 mins. just until they are softened up.
To the saut�ed garlic and onions add in the spices, wince, green peppers and tomatoes. Bring the entire mixture to a boil then lower the heat. Cook it simmering without a cover for about 10 mins.
Next, add in the scallops and shrimps then continue to simmer it with a cover for 4 mins. until it is done. Take out the bay leaf then serve this together with the linguini.
