Cheesy Florentine Bake Recipe
6 ozs. Uncooked spaghetti
1 jar of spaghetti sauce, halved
1/2 cup of cottage cheese
1 (10-oz) pkg. frozen & thawed out spinach, chopped
2 slightly beaten big eggs
1 cup of Parmesan cheese, grated and divided into 2
1/4 tsp. nutmeg, ground
Spaghetti noodles should be cooked as per package instructions then drain them well. Rinse the cooked noodles with some water (cold) and then drain again just to stop the cooking process. Spinach should also be drained well and then dry them out using paper towels.
In a bowl, mix together 3/4 cup of grated Parmesan, eggs, half a cup of spaghetti sauce & the cooked noodles together. Place the pasta inside a slightly oiled 9-inch pan for baking that is square-shaped.
In another bowl, toss together nutmeg, cottage cheese & spinach then pour this mix on the spaghetti then top with the remainder of the sauce.
Cook in the oven for about 30 mins. at around 350′ F then finish with a topping of the remainder of the grated Parmesan and continue to bake for 5 more mins. Allow to cool for 5 mins. prior to cutting them up to serve.
