Cinnamon Beef Noodles Recipe
4 cups of cooked wide noodles or vermicelli (around 8 ozs. pasta that is uncooked)
2 lbs. of meat from a beef stew, sliced into 1 1/2-inch cubes
5 cups of water
A (10 oz.) pkg. of fresh spinach, chopped
6 cloves of garlic, crushed
3/4 cup of soy sauce (low-sodium)
1 1/2 cups of sake or rice wine
1/4 cup of sugar
8 green onions, sliced into 1-inch size pieces
2 sticks of cinnamon
2 tsps. vegetable oil
1-inch piece peeled & sliced thinly fresh ginger
Inside a big bowl, mix together sugar, soy sauce, sake and water then whisk them together & set it aside. Inside a big pot or Dutch style oven on medium-high flame, heat a tsp. of oil & cook half of the stewed beef making sure to brown all the sides.
Take beef out of the pan and repeat the process with the remaining half of the meat from the cooked beef stew and another tsp. of oil.
After all the meat has been browned, return all of it to the pan then add ginger, cinnamon, water, garlic and onions and bring it to a slow boil while covered. Lower the heat then just continue to cook simmering it for 2 hrs.
Remove the cinnamon & slices of ginger then add in chopped spinach and cook for another 3 mins. or just until the spinach wilts. Serve this mixture over the noodles.
