Citrus-Cherry Pork and Pasta Recipe
8 ozs. of penne, mostaccioli or rigatoni, well drained & cooked
1 lb. pork tenderloin, sliced into cubes about 1/2-inch thick
2 tbsps. of orange juice
1 cup of steamed florets of broccoli
1 tsp. vegetable oil
2 tbsps. of balsamic vinegar
2 tbsps. of olive oil
1/2 sliced thinly yellow onion (sweet )
1/2 cup of cherries, dried
1/4 tsp. of salt
1 tbsp. orange zest, grated
1/3 cup coarsely chopped walnuts
Onto a skillet that is nonstick, heat the oil on medium-high flame. Add in onions and cubes of pork then cook for 3-4 mins. or just until the cubes of pork appears well browned & the onions are softened. Set this aside.
For the dressing: Mix together pepper, salt, olive oil, balsamic, zest of the orange and orange juice inside a little jar then shake it all together.
Into a big bowl, combine onions, pasta, cherries, broccoli, walnuts and the cooked pork together with dressing.
