Crawfish Tortellini Recipe
Tortellini, already cooked as per instructions
1 lb. of crawfish tails
2 (10-oz.) pkgs. of Parmesan
2 tsps. of cornstarch, then dissolved in 1/4 cup of water (cold)
1/2 cup of butter
2 cloves of chopped garlic
1 med. chopped onion
A cup of whipping cream
1/2 cup of Parmesan
1/8 cup of parsley, chopped
In a skillet, saute garlic and onions in the butter just until they are translucent. Put in the crawfish tails that have been rinsed slightly and cook it for about 5 mins.
Put in cream, cornstarch mix and parsley and continue to cook until the mixture starts simmering.
Add in the cooked tortellini in the sauce and season with some pepper and salt. Put the pasta into a casserole that has been buttered lightly then top with a sprinkling of parmesan.
Bake in the oven at around 350′ F or just until it is heated through.
Makes 6 servings.
You can serve this dish with a salad & a French loaf bread that has been heated.
