Creamy Chicken and Penne Recipe
1 lb. penne pasta
1/2 lb. chicken breasts, skinless & boneless cut into 3×1-inch pieces lengthwise
3/4 cup of sun dried tomatoes in oil, drain well & chopped
A cup of heavy cream
4 cups of florets of broccoli
1 sliced onion
1/4 tsp. of black pepper
1/2 cup of chicken stock
1 tbsp. of olive oil
1 tsp. of salt
2 tbsps. of balsamic vinegar
3/4 cup of cheese (parmesan)
Pasta should be cooked as per instructions from its package. Add in the broccoli in the remaining 2 mins. of the cooking pasta. In a skillet, heat the oil and saute the onions until they are soft & tender.
To the sauteed onions add in the strips of chicken then continue to cook. Follow with the cream, vinegar, pepper, salt & the sun-dried tomatoes then simmer for 4 mins.
Drain well the cooked penne and the broccoli then combine with the chicken mix & parmesan.
Serves 6
