Fettuccine with Avocado Recipe
1 lb. of fettuccine noodles (dried ) or any pasta that is dried
1 1/4 cups of tomatoes (sun-dried), diced
1 med. avocado (around 8 ozs.), peeled & diced
1/4 cup of sherry wine vinegar
1 cup of green bell pepper, diced
1/2 cup of green onions, chopped
1/2 cup of basil (fresh), chopped
2 tbsps. of olive oil
On a bowl, mix together the diced bell peppers, half the diced avocado, oil, vinegar, tomatoes, basil and green onions. Make sure that they all are well coated all throughout with vinegar and oil.
Pasta should be cooked as per package instructions until cooked through but still firm and then drained of water then transferred to a salad bowl.
Then add all other ingredients while fettuccine is quite hot and combine them well together. Best served while hot then finish with a garnishing of diced avocados.
