Fried Ravioli with Quick Tomato Sauce Recipe
For the Sauce:
2 (14 1/2 oz.) cans of Italian-style tomatoes, liquid set aside
2 chopped finely garlic cloves
2 tbsps. of olive oil
3 tbsps. of fresh basil, chopped coarsely
or a tbsp. of dried basil
1 pc. chopped small onion
Pepper & salt for taste
For the Ravioli:
2 tbsps. of olive oil
9 ozs. of refrigerated or frozen ravioli of your choice
Starting with our sauce: Onto a medium-sized skillet on medium heat, add in olive oil then saute the garlic and onions for 5 mins. until they are tender and not browned.
Next, add in tomatoes and if there are any large pieces then break them up if necessary using a spoon. Bring this mixture to a boil then cook it simmering on low flame for 15 mins. until sauce thickens.
Add in basil then pinches of pepper and salt for taste. Recipe makes 2.5 cups of sauce.
Ravioli should now be cooked as per instructions from its box then drained well and separated one by one to make sure that they don’t stick to each other.
Dry ravioli with some paper towels. On a nonstick skillet on moderate flame, heat olive oil and begin to saute ravioli for 2-3 mins. on each side just until they are crisped & browned slightly then drain them on some paper towels.
Best served hot.
For hors d’oeuvre’s this recipe can serve 6-10, when serving as 1st course, this recipe makes 4-6 servings.
