Greek Style Penne with Fresh Tomatoes, Feta and Dill Recipe
12 ozs. of penne pasta
2 lbs. of seeded, halved & chopped tomatoes
1/4 cup of extra-virgin olive oil
1 cup of green onions (the white & pale green parts), chopped
7 ozs. of crumbled feta cheese
1/4 cup of dill (fresh), chopped
6 tbsps. of parsley(fresh ), chopped
In a big bowl, mix together tomatoes, onions, crumbled feta, parsley, dill and olive oil then set this aside.
Pasta should be cooked inside a pot that has salty boiling water just until they are al dente. Drain well.
Add the hot penne to the tomato sauce and mix well to evenly coat the penne with the sauce. Season with some pepper & salt before serving.
