Green Noodles Baked with Two Cheeses Recipe
1 (8 oz.) pkg. of spinach (green) noodles
2 well-beaten eggs
1/2 cup of Swiss cheese, grated finely & divided
4 tbsps. of butter, melted, cooled & halved
1/4 cup of Parmesan cheese, grated finely & divided
Pepper & salt for taste
Oven should be preheated to around 350′ F. Noodles should be cooked as per instructions from its package and make sure that they are not overcooked. Put in a colander & rinse with running water then drain well.
In a bowl, mix together 2 tbsps. of grated parmesan, 6 tbsps. of Swiss cheese & 3 tbsps. of butter (melted) and add in cooked noodles and blend them well together.
Season with some pepper and salt then transfer them to a greased 9-inch square pan. Finish with a sprinkling of butter and remainder of the cheeses on the top & bake inside the oven for about 30 mins.
Slice into 6-8 pcs. then serve.
