Green Noodles Recipe
2 1/2 cups of flour (all-purpose)
2 eggs
2 1/2 cups of spinach leaves, tightly packed & torn
1/4 cup of water
1 tsp. of salt
In a pan that has the cover on, cook the spinach with some water just until they are soft (this yields around half a cup) then cool the spinach down.
Inside a food processor with the steel blades, process together eggs, salt and undrained leaves of the spinach until the mixture smoothens.
Add in flour and continue to process it until a ball is formed.
Onto a surface that has been lightly dusted with some flour, divide dough and roll out half of dough to a rectangle that measure around 18×15-inch and allow to stand for 20 mins.
Roll up dough loosely and cut in slices that are 1/4-inch wide the unroll dough then cut it in your desired length. Spread slices of dough on the racks and allow to dry for about 2 hrs.
Noodles should be cooked uncovered inside a pot that has salty boiling water or any soup for about 10-12 mins. If you are not going to be using them right away just store them inside refrigerator, covered.
Makes about a pound or around 7 cups.
