Green Onion Fideo Recipe
8 ozs. fideo or any fine pasta, broken in 1-inch thick pieces
1 (8 oz.) can of tomato sauce
1 med. chopped onion
3 – 4 chopped scallions
2 cloves of minced garlic
A dash of cumin
8 ozs. grated Cheddar cheese
3 cups of water
1/4 tsp. of chili powder
Pepper & salt for taste
3 tbsps. of vegetable oil
Onto a big skillet, heat the oil and add the fideo then cook them until they are browned lightly. Add in garlic & onions then cook them until they are softened.
Stir in cumin, chili powder, tomato sauce, salt, pepper and water then bring the sauce to boiling point.
After it has boiled, reduce the heat then simmer it covered until all the liquid has been absorbed (10 mins.)
Sprinkle scallions and grated cheddar on the top and just cover it up until the cheese has melted. Best served while still hot.
