Homemade Noodles with Poppy Seeds Recipe
2 1/2 – 3 cups of flour
4 eggs
1/2 cup of butter
2 tsps. of poppy seeds
1 tsp. of salt
1 chopped small onion
1 tbsp. of oil
In a medium-sized bowl whisk together salt and eggs then add in a cup of the flour. Gradually add in little amounts of flour.
If the mixture cannot accommodate anymore flour then transfer the dough on a surface that has been lightly dusted with some flour then start kneading, adding in small amounts of flour, just until the dough becomes smooth & is not anymore sticky (10 mins.).
Place the dough inside another bowl & cover it then allow to rest for about an hour. After dough has rested divide it in 4 equal parts. Using a rolling pin, roll out a portion of dough in the shape of a rectangle that is about 1/8-inch in thickness.
Lightly dust the dough with some flour then roll it up tightly like a jellyroll. Using a knife, slice it in 1/8-inch pieces. Uncurl the slices then set them aside. Do this same process again with the other portions of dough.
In a saucepan, heat butter until it has melted then saute the onions just until they are tender. Add in the seeds then stir it up and then set it aside.
To a big pot that has boiling water, add oil then cook the noodles in the pot until they are soft. Drain them well then mix noodles with the poppy seed mix.
You can substitute any other herb in lieu of the poppy seeds.
