Italian Beef Pasta Recipe
1/4 lb. of rotini pasta
2 cups of beef stock
1 lb. of beef tenderloin, sliced in thin strips
2 chopped up tomatoes
1 tbsp. of vegetable oil
2 tsps. of Italian seasoning
1 chopped onion
1 tbsp. of cornstarch
2 cloves of minced garlic
1 chopped zucchini
1/2 lb. of mushrooms, sliced
3 chopped red bell peppers
On a big skillet on medium flame, saute the strips of beef in vegetable oil just until it is not anymore pinkish. Next, add in the Italian seasoning and the vegetables that have been prepared then cook stirring for about 2-3 mins. or just until the onions are tender.
Dissolve the cornstarch in the stock until it smoothens out. Then add this to the meaty mixture inside the pan and cook stirring still just until it boils and becomes thick.
In the meantime, cook the rotini as per instructions on its package. To finish, just spread out the beefy mixture on the cooked rotini and garnish it with some basil if you want.
