Jumbo Pasta Shells with Cheese Filling Recipe
Jumbo pasta shells
2 lbs. of ricotta cheese
1 tbsp. of chopped parsley
4 cups of spaghetti sauce
1/2 lb. of diced mozzarella cheese
A pinch of nutmeg
2 eggs
Pepper & salt for taste
1/2 cup of grated Parmesan cheese
In a bowl, combine together 1/4 cup of parmesan, parsley, eggs, diced mozzarella and the ricotta. Season it with some nutmeg, pepper & salt and blend it well together then set it aside.
Pasta shells should be parboiled in about 5 qts. of boiling salty water, stirred occasionally then drain after cooking using a colander. Cooked shells should be filled up with the filling mix.
On the bottom of pan or baking dish, cover it evenly with the sauce. Make sure to arrange in a single layer the pasta shells that have been filled up and line them up inside the dish.
Spread out the remainder of the sauce on top of the cooked, filled up shells then bake in the oven for 30 mins. at around 350′ F. Finish with a sprinkling of grated parmesan and serve it while still hot.
