Lasagna Ole Recipe
4 big pcs. of corn tortillas
2 cups of cooked & chopped chicken
1 can of olives, sliced & drained
29 ozs. of heated salsa
1/3 cup of cilantro, chopped
4 ozs. of green chiles, well drained & diced
8 ozs. of cottage cheese
3/4 cup of shredded Cheddar cheese
1 egg, slightly beaten
3/4 cup of shredded Monterey jack cheese
In a bowl, combine salsa, chicken and cilantro together and then spread about 1/3 of the mixture on the bottom of an 11×7-inch microwave-safe baking dish.
Next, arrange 2 pcs. of the tortillas at the top. In another bowl, mix together cottage cheese, egg, green chiles and olives with half a cup shredded Cheddar and half a cup Monterey Jack then spread about half of the mixture on top of the tortillas.
Do the exact same process of layering and end with the salsa mix on the topmost portion. Using a plastic wrap, cover the top of dish with it then place inside the microwave which has been set on HIGH and cook for about 10-12 mins all the while rotating it while it is cooking.
Take off the wrap then sprinkle the top with the remainder of the cheese.
Allow to stand just until the cheese has melted. Slice in squares.
