Linguine with Clam Sauce Recipe
16 ozs. of linguini pasta
2 slices of day-old bread, crumbed
1 tbsp. of dried parsley
13 ozs. of clams in juice, minced
3 tbsps. of olive oil
1/4 cup of dry white wine
2 cloves of garlic, minced
8 ozs. of bottled clam juice
Pasta should be cooked as per package instructions. Onto a big skillet or pan, heat the oil on medium flame and saute the garlic just until it is browned lightly.
Add in the crumbs of bread then cook it until they are toasted lightly. Take out of the heat then set it aside.
Inside a skillet, combine together clams with its liquid, white wine and the clam juice then bring it to a boil.
Continue to cook it until the liquid has reduced to about a third of its original size. Then add in pepper, salt & parsley.
Drain the pasta then add in crumbs of bread and the sauce. Serve the pasta together with some bread and salad.
