Linguine with Oysters Recipe
1/2 lb. of cooked linguine
1 pint of drained small fresh oysters
3 minced scallions
1/4 cup of butter
5 minced shallots
1 crushed lightly clove of garlic
2 tbsps. of minced fresh parsley
Freshly ground pepper & salt
In a big skillet on medium flame, melt the butter and saute garlic and shallots until the garlic turns golden. Take out the garlic and discard it. Just continue to cook until the shallots become soft (5 mins.).
Add in scallions, parsley, oysters & its liquid. Lower the heat then continue to simmer it until the oysters have been heated all throughout but they should still be soft (3 mins.).
Add in the linguine and mix them all together. Season it with some pepper and salt for taste then serve it right away.
Makes 2 servings as main dish and 4 servings as the 1st course.
