Manicotti and Shell Recipe
To make the shell:
4 eggs
1 cup of flour
1 cup of milk
Mix together all the ingredients and place around 1-2 tbsps. of this mixture on the bottom of a skillet that has been greased lightly with some oil on low flame (this mixture should be cooked like a crepe. Recipe makes around 18 shells.
To make the manicotti:
Garlic
15 ozs. Ricotta
1 egg lightly beaten
1/4-1/2 lb. finely chopped mozzarella
1 tbsp. of parsley, minced
3 tbsps. of Parmesan, grated
Pepper & salt for taste
Oven should be preheated to around 350′ F. Mix together all the ingredients and make sure to blend everything well. Fill the shells with about 1 tsp. of the filling.
Evenly spread out sauce on the bottom of a baking dish then layer out the already filled up shells in a single array.
Pour some sauce on the top of the shells then bake in the oven for about 30-40 mins. After the 40 mins.
layer the top with a sprinkling of the grated Parmesan and continue to bake it for 5-10 mins.
