Native American Ravioli Recipe
3 cups of flour, sifted
1 tsp. of vegetable oil
1 tsp. of salt
4 eggs
Place all of the flour onto a work surface that is flat and build it up in a small mound.
Form a well in the middle using your own hands. Crack open eggs right into your small well & using a fork, add in oil and salt then slowly mixing in flour around edges.
Mix well then start kneading dough using your hands for about 8-10 mins. just until dough becomes elastic and smooth. If dough is a bit dry, then add in a small amount of water and if dough is kind of sticky and moist, then add in flour.
If you have already achieved the consistency of dough that you want then cover dough with some plastic wrap then put inside your fridge for about 15 mins.
After 15 mins inside the fridge, take your dough out then portion it by measuring it in a handful then roll dough out to very thin layers.
You can shape and size your dough as you like them to be and you can use any homemade or bought filling to assemble ravioli.
Blue Cornmeal Ravioli
Just replace flour in this recipe with a cup of grounded finely blue cornmeal & 1.5 cups of flour then add 1 egg to the 4 already in this recipe.
