Noodles Recipe
2 cups of flour (all-purpose), prior to measuring, sift first
3 tbsps. of cold water
1 tsp. of salt
4 egg yolks
In a bowl, put the flour that has been sifted already and using your fork, form a well in its center. Egg yolks should be slightly beaten & add in salt and water to it.
Pour in the mixture inside the well and still using your fork, begin to slowly blend in all ingredients.
Then, using your fingers, start to work all ingredients until you form a dough. Take dough out from the bowl and place it on a board that has been lightly dusted with some flour then start to knead it.
Portion out dough in 3 equal parts then roll out each portion as thin as you can make it (should be not thicker than that of a paper).
After all three parts have been thinly rolled out, place them on a clean tea towel for them to become dry. Dough shouldn’t be too sticky and it shouldn’t be too brittle as well.
If it seems dry, lightly dust it with some flour then roll it up like a jellyroll and be gentle in doing so.
Using a knife, slice the rolled up dough in 1/16-inch – 3 inches wide strips, depends on what you will use dough for. Let them dry out before using.
