Pasta Rags and Salmon Recipe
1 lb. 1 lb. dry noodles of lasagna or fresh sheets of pasta
8 ozs. fresh salmon fillet, bones & skin taken out & fish cut in slices that are paper-thin
6 qts. water
1/2 tsp. of pepper
1/4 cup of fresh dill, chopped
2 tbsps. plus 1 tsp. of salt
6 tbsps. of extra-virgin olive oil
1 cup of seeded & diced ripe tomato
Inside a big pot, bring 6-qts. water to a boil and add in 2 tbsps. of salt into it.
Next, add in pasta and cook for 4-6 mins. just until pasta is cooked through but still firm and drain it well but set aside a cup of the pasta water. Don’t rinse the pasta.
Place the pasta inside a clean bowl and add in olive oil then mix them well to make sure that the pasta is well coated with the oil.
To that, add in 1 tsp. of salt & all other ingredients. Mix well and if you want a more liquid sauce, add some of pasta water to the dish. Serve while still hot.
