Pasta Vegetable Bake Recipe
1 (20 oz.) pkg. frozen manicotti or stuffed shells
1 (8 oz.) can of tomato sauce
1/2 cup of diced sweet red pepper
1 diced med. tomato
2 tbsps. olive oil
1 minced clove of garlic
1 cup diced zucchini
1/4 cup of chicken stock
1/2 cup of onion, chopped
1/4 tsp. dried basil
1 cup sliced mushrooms
1/4 tsp. dried thyme
1/2 cup of mozzarella cheese
1/4 tsp. dried parsley flakes
Pepper & salt
In a saucepan, heat the oil and add in tomatoes, mushrooms, zucchini, pepper, garlic and onions then cook it until they are softened (3 mins.).
Pour in the broth, herbs & tomato sauce then cook simmering for about 2 mins. while stirring every so often. Season it with some pepper and salt.
Spray some nonstick spray onto a deep 2-qt. dish for baking and spread about 3/4 cup of the sauce onto the bottom.
Layer the pasta inside the dish then cover it with remainder of the sauce. Finish with a sprinkling of cheese on the top.
Dish should be covered with some foil and baked inside the oven for about 40 mins. at around 400′ F. Take out of the oven then serve while still hot.
