Pasta with Chicken and Creamy Basil Sauce Recipe
12 ozs. fettuccine, uncooked
3/4 lb. skinless & boneless chicken breasts, cut in thin strips
1 tbsp. olive oil
1 (7 oz.) jar of drained & sliced roasted red peppers
1 sliced big onion
1 cup of milk
1/2 cup of Parmesan, grated
1 tsp. dried basil
3 ozs. cubed cream cheese
In a skillet on medium flame, heat the oil & saute onions until they turn light brown stirring often (8 mins.). Add in chicken & cook it for 5 mins more until chicken is thoroughly cooked. Add in basil & milk then bring to a boil.
Lower heat & add in cream cheese & the roasted peppers then stir often just until the cream cheese is melting & sauce becomes smooth.
Add parmesan in the sauce and continue to cook and mix it well. Cook the pasta as per directions from its package then combine sauce and warm pasta together.
