Pasta with Chunky Peppers Recipe
1 (9 oz.) pkg. fresh meat or cheese-filled tortellini
1/4 cup of chicken stock or dry white wine
4 med. red and/or yellow peppers, cut in 3/4-inch chunks
1 big minced garlic clove
2 tbsps. olive oil
1 chopped small onion
1/2 tsp. salt
1 tsp. dried basil
1/2 tsp. black pepper
1/4 cup of Parmesan cheese, grated
Fresh basil (optional)
Tortellini should be cooked as per instructions from its package. In the meantime, heat the oil on a saucepan on medium-high flame and saute garlic, onions, pepper, salt & the chunks of sweet peppers for about 5 mins. and make sure to stir it often.
Add in stock or wine and decrease heat to around low. Cook the vegetable mix covered and let it simmer on for about 10 mins. or just until the peppers become tender.
Drain the pasta and add in the peppery sauce. Finish with a sprinkling of grated cheese. Scatter some fresh basil on the top for garnishing if you want.
