Pasta with Creamy Zucchini Sauce Recipe
1 lb. shell pasta or rotini
1 lb. scrubbed & grated coarsely fresh zucchini
1 big garlic clove, minced
1/3 cup of oil
1/2 cup of parmesan cheese, freshly grated
8 ozs. Shredded mozzarella cheese
1/2 cup of fresh parsley, chopped
1/2 tsp. salt
1/4 tsp. pepper
Pasta should be cooked inside a pot of salty boiling water & make sure to drain it well and set it aside. Using the same pot where the pasta was cooked, heat the oil on moderate flame then add in garlic then cook for about 30 secs.
Put the pasta back in the pot & mix them all well.
Add the cheeses & mix it again. Then add in the remainder of the ingredients then blend them all together on medium heat just until the cheese & the moisture from the zucchini coats the pasta with a sauce that is light.
Serve it right away with some extra cheese.
