Pasta with Tequila Lime Cream Sauce Recipe
For the sauce:
1 1/2 cups plus 2 tbsps. of cream
3 minced/pressed cloves of garlic
1/2 cup of lime juice
3 tbsps. butter
1/4 cup of white wine vinegar
1 minced finely shallot
1/2 cup of tequila
1 tsp. cornstarch
For the pasta:
12 ozs. Fettuccine pasta
4 Roma tomatoes, diced
4 chopped finely green onions
Optional Ingredients
Grilled salmon, chicken or shrimp
To make the sauce: Mix together tequila, vinegar, lime juice, shallots and garlic in a saucepan & cook this mixture until it has reduced to 1/4 of a cup.
Next, add in the cream & continue cooking until it has again reduced to half its amount. If you don’t want the pieces of shallots and garlic, you can strain them out.
Place the skillet with the reduced mixture back on the heat then add in the butter. In a small cup, dissolve cornstarch in about 1 tbsp. of water. Add this to the sauce for thickness.
Pasta should be cooked as per instructions from its package until they are al dente then drain it well.
Add in tomatoes and green onions to the pot where pasta was cooked and be sure to stir them well.
Next, add in pasta that was drained and the thickened sauce then combine all of the ingredients well.
Finish with a garnishing of cilantro if you want or you can also put grilled seafood or chicken at the top to have a more hearty meal.
