Penne Vodka Recipe
1 lb. penne
1/4 cup of vodka
2 tbsps. Butter or olive oil
2 big cloves of garlic
2 cups of tomato puree / 2 cups of crushed tomatoes (canned)
Salt
1/2 cup of heavy cream
Red pepper flakes
Cook penne in 4 qts. of boiling water that has been sprinkled with 1 tbsp. of the salt. In a saucepan on medium-low flame, saute garlic in oil for 2 mins. until it becomes tender but not brown.
Add in pureed tomato and vodka then bring the mixture to a simmer then let it cook some more for about 3 mins. (just for alcohol to cook off).
Season with some salt & the red pepper flakes and over season the dish at this point to give some allowance for cream to be put on your sauce later on.
Drain penne. Add cream into your sauce then continue to simmer for 2-3 mins. more. Mix pasta and sauce well then serve
