Pesto Pasta Recipe
12 ozs. pasta, rigatoni or rotini
1/2 cup of light cottage cheese
2 tbsps. olive oil
1/3 cup of dry white wine
4 tsps. crushed dried basil or 1/4 cup of chopped fresh basil
2 minced cloves of garlic
4 ozs. light cream cheese
1/3 cup of water
1/2 cup of Parmesan
1/2 cup of parsley, snipped
Pasta should be cooked as per instructions from its package and drained well then kept warm. In a skillet or saucepan, heat the oil & add in garlic & basil then cook for 1 min.
Lower the heat then add in cream cheese, parmesan and cottage cheese. Continue to cook & stir the mixture until it smoothens. Add in water and parsley then cook it without a cover for 3 mins. or just until it thickens slightly.
Serve it on the top of cooked pasta.
