Ricotta Lasagna Swirls Recipe
8 pcs. Lasagna noodles
1/2 lb. ricotta cheese
2 tbsps. Parmesan cheese
2 lbs. fresh spinach
1/4 tsp. nutmeg
Pepper & salt for seasoning
Lasagna should be cooked until they are al dente and be sure to drain off the water. Spinach should be steamed for about 7 mins. and chopped.
Mix the spinach together with about 2 tbsps. of Parmesan, half a pound of the ricotta, pepper, salt and 1/4 tsp. of nutmeg.
Each lasagna noodle should be coated with around 2-3 tbsps. of the spinach mixture then roll them up and let them stand on end inside a dish for baking.
To make the sauce:
2 cups of tomato sauce
1/2 cup of onion, chopped
1/2 tsp. oregano
2 minced cloves of garlic
1/2 tsp. basil
In a skillet, saut� the onions and garlic then add oregano, basil and tomato sauce. Evenly spread out this sauce on the top of the noodles. Bake in the oven for about 20 mins. at around 350F.
