Rigatoni Recipe
1 lb. rigatoni noodles, cook until it has cooked through
10 diced plum tomatoes
1/3 cup of olive oil, divided
1 chopped red bell pepper
4 minced cloves of garlic
1 lb. mozzarella, shredded
1 chopped green bell pepper
Pepper & salt to taste
1 cup of fresh basil, tear it in little pieces
On a skillet, heat 2 tbsps. of oil on very low flame and saute the garlic until they are about to brown then take them off from the heat.
Mix together the remainder of the olive oil, basil, garlic, tomatoes and peppers then just season it with some pepper and salt. Stir then cover it letting it rest in room temp. for about 6 hrs.
If ready for serving, just cook the rigatoni and layer out the mozzarella on the top of the tomato & pepper mixture then add some olive oil. Mix together the pasta & sauce then serve. Serve with some garlic bread.
