Rigatoni with Tomatoes and Artichokes Recipe
3 cups of rigatoni, uncooked
1 (14 oz.) can of drained & quartered artichoke hearts
2 minced cloves of garlic
1/2 tsp. salt
3 chopped tomatoes
3 tbsps. Olive oil
3 tbsps. Fresh basil or 2 tsps. dried basil
1 tbsp. juice of a lemon
1 tsp. sugar
1/8 tsp. red pepper flakes, crushed
1/4 cup of Parmesan, grated
Rigatoni should be cooked as per instructions from its package. Drain & rinse it off. In a bowl, mix together all the ingredients aside from the Parmesan. Then add in the rigatoni and finish with a sprinkling of Parmesan atop prior to serving.
