Salmon Fettuccine Recipe
8 ozs. Fettuccine, uncooked
1 1/2 tbsps. Flour (all-purpose)
1/2 lb. fillet of salmon, sliced in 2-inch pcs.
2 cups of half-and-half
1 1/2 tbsps. Margarine or butter
1 cup of Parmesan cheese, grated freshly
1 1/2 tsps. dry sherry
1 minced clove of garlic
1/4 tsp. salt
2 tbsps. Melted margarine or butter
1/4 tsp. white pepper
Fettuccine should be cooked as per instructions from its package and drain it off then set it aside. In a saucepan, melt 1.5 tbsps. of the butter on low flame then add in flour and continue to stir the mixture until it smoothens.
Cook this for about a minute and stir it constantly.
To the mixture slowly add in the half-and-half and continue to cook it stirring on medium flame until the mixture bubbles and thickens.
Add in pepper, salt, sherry and cheese and keep this mixture warm. In a skillet, saute the garlic in 2 tbsps. of butter then add in the salmon until it starts flaking.
Add the sauce and cooked fettuccine and mix well. Continue to cook this on low flame until everything is heated and serve it right away.
