Seafood Lasagna Recipe
1 lb. lasagna noodles
2 (10 1/2 oz.) cans of soup (cream of mushroom)
1/2 tsp. each salt & pepper
2 lbs. shrimp, peeled & cooked
1 big chopped onion
1 slightly beaten egg
6 ozs. Mozzarella, sliced
4 ozs. Butter
6 ozs. Crab meat, cooked & flaked
1/3 cup of medium dry white wine
8 ozs. Softened cream cheese
1/3 cup of milk
12 ozs. Ricotta cheese
2 tsps. Basil
Parmesan cheese
Lasagna noodles should be cooked as per instructions from its package then drain it well. On a skillet, cook together onions in butter & white wine just until onions are soft. Take off from the heat and add in basil, egg, pepper, salt, ricotta and cream cheese then set this aside.
On a big bowl, mix together milk & soup then add in crab meat that has been flaked and the shrimps. Then assemble lasagna inside a casserole dish with alternating layers of the noodles, followed with the cream cheese mixture and the soup.
Just make sure that bottom layer is slathered with around half of cheese mixture and set it aside for use later.
Top final layer with a sprinkling of parmesan & bake inside the oven without a cover for about 45 mins. at around 350′ F. Sprinkle the top with remainder of mozzarella ( also some parmesan if you want) & bake it for 15 mins. more.
Allow to cool for about 15 mins. before serving it. Best served with some freshly baked garlic bread and salad greens.
