Seafood Pasta Supreme Recipe
1 (8 oz.) pkg. vermicelli
1 1/2 lbs. shrimp, cooked
4 tbsps. Butter
1 cup of chicken stock/broth
1/4 lb. quartered mushrooms
4 tbsps. Flour
1 cup of heavy cream
1/3 cup of Swiss or Gruyere, shredded
2 tbsps. Sherry
2 tbsps. Butter
1/2 cup of toasted almonds. Slivered
White pepper for seasoning
1/3 cup of Parmesan cheese, grated
Vermicelli is to be cooked and drained well. In a big saucepan, melt 4 tbsps. of butter then stir in the flour. Slowly add in cream and the broth then cook it on low flame, always stirring it until the sauce gets thick.
Add in sherry, pepper and shredded Swiss or Gruyere continuously stirring until the cheese is melting.
In another skillet, saut� the mushrooms in 2 tbsps. of butter then add this to the sauce. Take the sauce out of the heat then add in vermicelli and shrimp.
Pour the mixture into a casserole dish then finish with a sprinkling of almonds and parmesan. Broil just until it has browned lightly (6 mins.).
