Shrimp and Mushroom Linguini Recipe
1/2 lb. dried linguine
1/2 lb. shelled & deveined raw shrimp
Pepper & salt for seasoning
1/4 lb. mushrooms
1/4 cup of olive oil
1/4 cup of fresh parsley, chopped
Linguine should be cooked inside a big pot of salty boiling water just until it is al dente (7-9 mins.) and drain it well. In the meantime while linguine cooks, mushrooms should be sliced.
On a skillet on medium-high flame, heat around 2 tbsps. of olive oil and add in sliced mushrooms then cook it continuously stirring it often just until mushrooms are tender and browned lightly (3-4 mins.).
Transfer cooked mushrooms onto a plate. Then add 2 tbsps. of olive oil into the skillet and add in shrimps then cook until pink (2-3 mins).
Remove from heat then add in mushrooms to skillet then lightly season it with some pepper and salt. Add in cooked linguine to skillet and also sprinkle chopped parsley as well and make sure to mix them well.
