Soubrette Recipe
8 ozs. lasagna noodles
1 (10 oz.) pkg. frozen chopped spinach
2 slightly beaten eggs
3 cups of small curd cottage cheese
1/4 cup onions, chopped
1/3 cup of Cheddar cheese, grated
2 tbsps. butter
1 lb. grated Monterey jack cheese
Butter when needed
A dash of paprika
Oven should be preheated to around 350′ F. Lasagna should be cooked as per instructions on its package then set it aside. In a skillet, saute the onions in butter just until onions turn translucent then set this aside as well.
Cook the spinach just until it thaws & drain it then squeeze until it dries. Add in the onions that were sauteed then set this aside.
Mix together eggs, cottage cheese & the Monterey Jack then divide this mixture in 2 equal portions and put them in separate bowls.
Then, add in the cooked spinach and onion mix to one of the cheese mixtures and mix it well.
Place a layer of the noodles inside a shallow dish for baking, that has been well greased with some butter, then evenly spread out the spinach-cheese mix and put dots of butter all over.
Put a new layer of the noodles atop then cover it with plan cheese mix.
Finish with a sprinkling of Cheddar and also a sprinkling of paprika then bake in the oven for about 30 mins. or just until it bubbles and the dish has thoroughly cooked already.
