Spaghetti with Clam Sauce and Bacon Sauce Recipe
6 ozs. spaghetti
1/3 cup of dry white wine
3 (6 1/2 oz.) cans of clams that have been chopped
1 pressed or minced clove of garlic
8 crips & crumbled slices of bacon
1 chopped finely small onion
2 tbsps. flour
Pepper, freshly ground
Parmesan cheese
Boiling salted water
1/2 cup of fresh parsley, chopped
Cook bacon on medium flame until it crisps up then take them out & throw away all drippings but leave 2 tbsps. of it in the pan or skillet where you cooked them.
Add garlic and onions into the pan and saute them until onions turn transparent & add in the flour and blend it in well.
Add in clams with their juice, pepper, parsley, bacon and wine stirring it to cook just until it bubbles and thickens then set it aside.
Spaghetti should be cooked inside a big pot of boiling salty water for 10 mins. or just until it is al dente then drain it well.
Then, place the cooked noodles onto a serving platter or dish then pour over it sauce made out of clams. Serve with parmesan.
