Spaghetti with Shrimp Sauce Recipe
1/2 lb. thin spaghetti or vermicelli
1 lb. peeled & deveined frozen shrimp
1 1/2 tsp. salt
2 tbsps. pimento, diced
1 cup of milk
1 cup of light cream
2 tbsps. sherry
1/4 cup of margarine
1 1/2 cups of fresh mushroom, sliced
3 tbsps. flour
1/2 tsp. paprika
1/2 cup Swiss cheese, shredded
2 tbsps. Parmesan cheese, grated
1/4 cup of scallions (including the tops), sliced
Shrimp should be thawed out. Spaghetti or vermicelli should be cooked as per instructions on its package and drain it well.
Inside a shallow baking dish that can hold about 2 qts and sprayed with some vegetable spray, arrange well the spaghetti or vermicelli.
On a skillet, heat up margarine and add in scallions and mushrooms then cook just until the mushrooms become soft.
Add in the shrimp and cook just until they turn pinkish then add in paprika, salt & flour. Next, add in cream and milk then cook it constantly stirring until the sauce thickens.
Add in pimento, sherry & Swiss cheese to the sauce mixture. Evenly spread out the shrimp sauce mixture on the top of the spaghetti or vermicelli then finish with a sprinkling of parmesan.
Put under the broiler around 3-4 inches away from the heat then broil the dish for 5 mins. or just until the dish is heated through and the cheese is slightly browned.
