Spaghetti with Zucchini Sauce Recipe
8 ozs. Spaghetti
3 cups of tomatoes, diced
1/4 cup of olive oil
1/2 tsp. salt
1 sliced medium-sized onion
2 sliced medium-sized zucchini
1/4 tsp. oregano leaves
1/4 tsp. pepper
Parmesan, grated
1/4 tsp. basil leaves
1pc. bay leaf
In a big pot or skillet, saut� the onions in heated oil just until they become tender-crisp. Add in tomatoes, oregano, basil, pepper, bay leaf, salt and the zucchini then cook it simmering with a cover for about 15 mins..
Next, take off the cover and cook simmering for an additional 10 mins.
Take out the bay leaf. In the meantime, spaghetti should be cooked as per instructions on its package and drain it well.
Spaghetti should be served with a topping of the zucchini sauce & grated Parmesan.
