Spicy Lemon Pasta Recipe
1 lb. fettuccine or spaghetti
1 1/2 cups of frozen peas, thaw them out
2 seeded & sliced thinly jalapeno peppers
3 tbsps. Olive oil, divided
3 sliced thinly cloves of garlic
1 tsp. kosher salt
1/8 tsp. pepper, ground freshly
Juice and zest of 2 lemons
1/3 cup Parmesan, grated freshly (optional)
In a big pot that has boiling salty water add in pasta then cook them as per instructions from its package and drain them well.
In a big saucepan, heat the 2 tbsps. of oil on medium-low flame and add in jalapenos, garlic & the zest of the lemons then cook it until they brown lightly (4-5 mins.).
Add in cooked pasta, 1 tbsps. of oil, pepper, salt, peas and lemon juice then cook them together until everything is heated thoroughly (3-4 mins.). Serve together with parmesan cheese if you want and mix everything well before serving.
