Spinach Lasagna Recipe
1 (8 oz.) pkg. lasagna noodles
1 (30 oz.) jar of spaghetti sauce
3/4 tsp. oregano
1 cup of water
1 lb. small curd cottage cheese
1 (10 oz.) pkg. frozen, thawed, drained & chopped spinach
1 1/2 cups Mozzarella, shredded & divided
1 egg
1 tsp. salt
1/8 tsp. pepper
On a big bowl, combine together egg, a cup of mozzarella, oregano, salt, pepper, spinach and cottage cheese then set this aside.
Onto a well oiled 13×9-inch baking dish, evenly spread 3/4 cup of the sauce at the bottom then followed by a third of noodles & half of the cheesy mixture. Do this same process of layering again.
For the last layer, first comes the lasagna noodles & followed with the remainder of the sauce and then finish with a sprinkling of half a cup of mozzarella.
Add in water all around the edges then cover the dish with aluminum foil tightly and bake in the oven for about 1 hr. and 15 mins. at around 350′ F or just until the top bubbles. Allow to cool for 15 mins. prior to serving it.
