Three Cheese Lasagna Recipe

1/2 lb. lasagna noodles, uncooked
40 ozs. Spaghetti sauce
1 crushed clove of garlic
1/2 lb. sliced mushrooms
1 tbsp. oil
1 chopped big onion
2 cups mozzarella cheese, shredded
1/2 tsp. dried rosemary
1/2 lb. sliced zucchini with skin on
1/2 tsp. crushed oregano
1 lb. ricotta or cottage cheese
3/4 cup Parmesan cheese, grated

In a bowl, mix together 1/8 tsp. of pepper, half a tsp. of salt, oregano, rosemary, garlic, zucchini, mushrooms, onions and oil then cover the bowl with some plastic wrap but leave a corner without cover for venting out.

Put this on the microwave with the settings turned to HIGH for about 6 mins. and stir it 1 time.

In a shallow microwaveable dish for baking that is about 3 1/2-qts. in measurement, spread about a cup of the sauce then layer 3 noodles on top of the sauce and evenly spread out half of the cottage or ricotta cheese mixture.

Drain off the vegetables that were microwaved earlier and place about half of it on top of the cottage or ricotta cheese.

Then, sprinkle half of the mozzarella and 1/4 cup of Parmesan then pour about a cup of the sauce on top of the cheeses.

Do the same layers again and end at the top with 3 lasagna noodles then spread out a cup of the sauce and finish with a sprinkling of the remainder of the parmesan.

Cover the dish but leave a little venting room and cook the dish for 35-40 mins. with the settings to MEDIUM and make sure to rotate the dish every 10 mins. until the noodles become tender.

Allow to rest still covered for about 5 mins. prior to slicing it up.
