Tortiglioni with Spicy Sausage Sauce Recipe
12 ozs. Dried tortiglioni (You can also use ziti, penne or rigatoni)
1 finely chopped onion
2 tbsps. Olive oil
1 tsp. granulated sugar
2 crushed big cloves of garlic
6 ozs. Spicy salami, with the rind taken off(You can also use pepperoni)
1 seeded & chopped fresh red chile (This ingredient is not readily available so if you can’t get it use 1/2-1 tsp of Italian pepper that has been crushed or you can just take this out of the recipe.)
2 tbsps. Tomato paste
1 finely chopped celery stalk
1 lb. peeled & chopped finely ripe Italian plum tomatoes
2/3 cup of red wine
Freshly ground pepper & salt for seasoning
Parmesan cheese, grated
2 tbsps. Fresh parsley, chopped for garnishing
Note: You should buy salami whole so you can cut it up in large chunks.
In a skillet, heat the oil and add in onions, chili, garlic and celery and cook it stirring gently for 10 mins. until they are tender.
Add in tomatoes, pepper, salt, sugar, wine and tomato paste and bring the mixture to a boil occasionally stirring. After it boils, reduce the heat and continue to cook it simmering for 20 mins.
Add in water if sauce gets too thick. In the meantime, cook the pasta until it is al dente.
Chop up salami in bite-size pcs. then add it to the sauce. Make sure to thoroughly heat the sauce through and adjust the taste according to your liking.
Drain the pasta and place it in a big bowl and spread out the sauce on the top and mix pasta and sauce well. Finish with a sprinkling of grated Parmesan.
