Vegetarian Italian Spaghetti Recipe
1 (16 oz.) pkg. cooked spaghetti
4 (15 oz.) cans of tomatoes, diced & undrained
1/4 cup of olive oil
1 diced big onion
3 chopped big shallots
2 tsps. Crushed dried basil
1 diced big green pepper
8 ozs. Sliced fresh mushrooms
10 chopped green onions
1 diced big red pepper
8 chopped big cloves of garlic
1 tsp. crushed dried oregano
Pepper & salt for seasoning
A pinch of red pepper
On a big skillet, cook stirring often the mushrooms, red pepper, oregano, basil, shallots, garlic, onions, bell peppers and mushrooms until they are browned lightly. Add in tomatoes together with the juice then bring mixture to boiling.
Lower the heat around to low then simmer it for 45 mins. Season with some pepper and salt.
Pour the sauce on the hot cooked spaghetti.
