Zippy Zucchini Pasta Recipe
1 (7 oz.) pkg. thin spaghetti or angel hair pasta
2 minced cloves of garlic
1 (16 oz.) can of undrained Mexican diced tomatoes
1 tsp. dried oregano
3 tbsps. Vegetable or olive oil
2 pcs. Zucchini (small), cut in 1/4-inch thick
1/4 cup parsley (fresh), minced
1/8 – 1/4 tsp. red pepper flakes, crushed
Pasta should be cooked as per instructions on its package. In the meantime, saute the garlic and zucchini in the oil on a medium-sized skillet until the zucchini turns crispy and tender.
Next, add in tomatoes, red pepper flakes and oregano then make sure that everything is thoroughly heated. Drain off the pasta then pour the zucchini mix on top.
